A combination of bold and fine layers weave their way across this highly polished blade, making it shimmer in the bright light. The swirling maple burl entices you to grasp the handle, whose smoothly sculpted contours fit comfortably in your hand. You may never need another knife.

The blade is forged from 80CRV2 and 15N20 high-carbon steels, and features a full-convex grind and an integral bolster. The handle is stabilized big leaf maple burl with nickel silver and Richlite spacers.

High carbon steel blades such as this one will develop a colorful patina over time. Always hand wash and towel dry the blade after use to prevent rust.

A must-have for the well-equipped chef, a paring knife fills the gap when a larger chef knife would be too cumbersome. Why not peel your potatoes in style with a bold damascus blade and a unique, spalted elm handle?

This paring knife features an integral bolster design with a hidden tang and a flat-ground blade, forged from 80CRV2 and 15N20 high-carbon steels. The handle is stabilized spalted American elm, which I personally harvested from my family's farm in upstate New York. Richlite and stainless steel spacers add an attractive transition from handle to blade.

High-carbon steel blades such as this one will develop a colorful patina overtime. Always hand wash and towel dry the blade after use to prevent rust.

Named for Jupiter's third-largest and most volcanically active moon, "Io" is a chef knife featuring a centerpiece of highly figured maple burl representing that volcanic moon, flanked on either side by black walnut and domed silver tacks, which represent other distant, orbiting planets and moons.


The blade is differentially-hardened W2 tool steel with a lively hamon and a full-convex grind. The bolster is black Richlite phenolic composite. The handle is stabilized black walnut and big leaf maple burl with fine silver spacers and sterling silver tacks. A stainless steel nut adorns the butt of the handle and secures the numerous pieces of the knife in place.
