The 80CRV2 carbon steel blade features a stiff spine and a thin edge with a full-convex grind. The domestic hardwood handle has been vacuum stabilized for water resistance. Its smooth contours and high polish make a statement in the kitchen knife block and are comfortable in the hand. Choose between a light or dark curly maple handle, paired with a bronze spacer and a phenolic composite bolster.
